I’ve been enjoying this little treat all summer long, both for breakfast and dessert. It is fresh, fruity, sweet and just tastes exactly like a beautiful summer evening.
Peaches & Cream is such a classic, so bring some summer into it by grilling it! It really brings out the flavour of the peaches and goes so well with the cold vanilla cream.
The Peaches & Cream
- 6 peaches
- 100 milliliter coconut cream / 0.5 cup
- 2 tablespoons of powdered cane sugar
- 1 teaspoon of pure vanilla bean powder
- 1 pinch of salt
Peaches: Cut the peaches in half and remove the pit. Cook them on the grill or a griddle for about 4 minutes on each side and plate them. You can also brush them with a bit of non-dairy butter or syrup first for extra goodness.
& Cream: Add your coconut cream to a mixing bowl with the powdered sugar, the vanilla and the salt. Whisk by hand or with an electric whisk until fluffy. Add to the peaches, sprinkle with fresh lemon balm, lime zest, almond slivers, chocolate chips or whatever your heart desires, and serve. Enjoy!
