Parsnips are yet another one of those vegetables that you can do pretty much anything with and get away with it. Roasted in the oven, mashed like potatoes or in this case; as fries. Delicious fries. Oh so delicious.
The Parsnip Fries
- 2 parsnips
- 1 teaspoon olive oil
- 1/2 teaspoon truffle infused olive oil
- Fresh tarragon
- Salt & pepper
The Directions
- Preheat oven to 200°C / 400°F
- Wash parsnips and cut into long chunks
- Place in a bowl with 1 teaspoon olive oil, salt & pepper and fresh tarragon
- Get your hands in there and mix well until all the fries are coated
- Place on baking paper on a baking tray
- Bake for 30-40 minutes / turn halfway through
- Serve with a sprinkle of truffle infused olive oil
- Enjoy!

I love parsnip fries.They don’t even need the truffle oil. I could eat them as is.
