This crazy hot summer has some serious upsides. First of all, it makes me binge drink water, something I usually am a bit too good at forgetting. Second of all, the beach. Self-explanatory. Third, I’ve had these popsicle moulds hiding in a drawer for years, and I finally get to use them. There are many more reasons, but long story short; I made these Peach Tea Popsicles and they’re fantastic!
PEACH TEA POPSICLES (makes 6)
275 mL Almond Milk
3 Peaches (450 g)
2 tbsp Maple or Agave Syrup
1 tsp Vanilla Extract
2 Black Tea Bags
Peel the peaches, and cut into slices.
In a medium pot, gently heat up the almond milk and syrup until steaming. Take off the heat. Add in the tea bags and let steep for 5 minutes. Remove tea bags, add vanilla and let cool.
In a blender, add peach slices and almond milk tea and blend until smooth. If you wish, you can reserve a few peach slices per popsicle and place them in the moulds for texture.
Pour the mix into moulds and place into the freezer. After about 30 minutes, add wooden sticks and place back into the freezer for at least 4 hours or overnight.
