Who doesn’t love burgers? Seriously. Burgers are one of the number 1 foods in my life.
The beauty of burgers is their versatility. You can put a few simple things in your burger, and it will be great, or you can be creative and over the top and it will be excellent.
This burger is great, excellent and perfect.
The juicy portobello, the sweet and sticky peach and onions, the tangy, creamy and delicate dressing, crunchy romaine lettuce and the crisp alfalfa sprouts. Perfection.
Portobellos are definitely, without a doubt, hand on my heart my favourite vegetable. They have all my love. All of it. Is there anything they can’t do?!
The Butter Bean, Pineapple & Tahini Dressing
- 1 slice of pineapple
- 2 teaspoons tahini
- 1 tablespoon pure maple syrup
- 1 tablespoon extra virgin olive oil
- 2 tablespoons water (more or less)
- 1/2 can of butter beans
- 1/2 lemon / the juice
The Butter Bean, Pineapple & Tahini Directions
- Run butter beans in a blender
- Add all ingredients to the blender except for the water
- Add water as needed
- Refrigerate & use in burger, in sandwiches, as a dip for fries or on bread etc.
The Caramelized Peach & Onion
- 1/2 sweet peach
- 1 large or 2 small red onion(s)
- 1 teaspoon pure maple syrup
- 1 tablespoon apple cider vinegar
- 1 tablespoon extra virgin olive oil
- 1 pinch of salt
The Caramelized Peach & Onion Directions
- Preheat oven to 200°C / 390°F
- Thinly slice the peach and cut the onion as rings or slivers
- Place peach and onion in a tin / I used a small loaf tin
- Coat in liquids and bake for 15 minutes or until sticky / take it out once or twice to stir/flip
The Portobello Directions
- Find 2 large portobello mushrooms / they will shrink a lot on the pan
- Gently rub them with a paper towel and sprinkle with Himalayan salt
- Grease a pan and cook them on medium to high heat for 3-5 minutes on each side
Assemble your burger; spread the dressing on a burger bun or French baguette, top with lettuce of your choice, place portobello mushroom, top with the onion & peach and other toppings such as alfalfa sprouts, sweet mustard, barbecue sauce, hot sauce, pickles, vegan cheese or whatever you may like. This burger is wonderful as it is but feel free to think outside the box.
Serve with sweet potato fries, parsnip fries or regular fries and the rest of the Butter Bean, Pineapple & Tahini Dressing as a dip.
