We all know the feeling. Some days just call for duvet on the sofa and a nice bowl of ice cream. Fortunately, it is possible to have just that, without having to feel bad about your life decisions. Yes. It’s true. Let me tell you how.
This ice cream requires a tiny bit of preparation. When I say tiny, I really mean tiny. All you have to do is grab a couple bananas and throw them in the freezer. Peel and chop them first, or you’ll be sorry. Trust me, I learned this the hard way.
Take your frozen banana chunks and blend them up. Any blender will do. I have found that the chunks sometimes tend to stay above the blades, so you may need to get in there with a spoon and push it all down a few times. When smooth, add some chopped vegan chocolate and a few drops of peppermint oil. Mix well. Put the ice cream back in the freezer for it to harden up. This will take a few hours or how long you can manage to wait. And if you find that you cannot wait at all, that’s okay. I understand you. We can just call it soft ice then. No one needs to know.
Add whipped coconut cream and a chocolate ganache. Garnish with mint leaves, chopped nuts, fresh raspberries or whatever you’re in the mood for. Be creative. Follow your dreams.
The Ice Cream (2 servings)
- 3 bananas, preferably ripe
- 20 g raw cocoa powder*
- 20 g chopped dark chocolate
- A few drops of peppermint oil
*Raw cocoa powder has a milder and sweeter flavour than standard cocoa powder as it hasn’t been roasted
