Soft Spelt Flatbread

(makes 8)

Sometimes we just need a good piece of bread in our lives. You feel me? And there is something so satisfying about wrapping that bread around something beautiful and hearty like falafels, fried portobellos, a warm and aromatic curry or fresh vegetables.




The Flatbread

  • 200 milliliter warm water
  • 600 milliliter organic spelt flour
  • 1 tablespoon extra virgin coconut oil
  • 1 tablespoon dry active yeast
  • 1/2 teaspoon salt

The Flatbread Directions

  • Mix water and yeast / leave for 5 minutes
  • Add coconut oil and salt / stir well
  • Gradually stir in the flour and proceed to knead for 10 minutes
  • Cover the dough with a damp kitchen towel and leave for 2 hours
  • Punch down the dough, divide into 8 pieces, knead them separately for 30 seconds and leave again for 30 minutes
  • Roll out the 8 pieces with a rolling pin / which totally means a red wine bottle in my case
  • Heat up a large pan on medium to high heat / coat with a bit of extra virgin coconut oil
  • Bake the bread on the pan / 2 minutes on each side should do
  • Enjoy!

I served these for lunch yesterday with a generous amount of homemade caramelized onion hummus, homemade falafels, lamb’s lettuce and pickled red cabbage. SCORE!
