Banana Bread – New & Improved | Vegan

About 2 years ago I shared my recipe for banana bread and naturally I have been making it again many times since then. Now, I’m really bad at following recipes. I mean really bad! Even my own, even when I know they work. I just don’t trust that I still want what I wanted a while ago. So I always add a little extra of this, add a little less of that. It just happens. Sometimes it ruins the recipe, but most times it goes well, and sometimes it even improves the recipe. That’s what happened here. My favourite banana bread recipe became even more of a favourite, and of course I’m gonna share the new, improved recipe with you!

So what is different about this recipe?
It’s a little less sweet and I added some nice spice to it. I also added chopped walnuts to the recipe. Not much, just a little. Just enough for the aroma and the crunch. I think it’s perfect. Oh, and you only need 1 bowl.

THE BANANA BREAD
4 ripe Bananas
100 grams of Vegan Butter
100 grams of Cane Sugar
50 grams of Muscovado Sugar
100 milliliters of Almond Milk
1 teaspoon of Vanilla Powder
1/2  teaspoon Sea Salt
1/4 teaspoon Cinnamon
1/4 teaspoon Nutmeg
250 grams of Flour
2 teaspoons of Baking Powder
1 teaspoon of Baking Soda
100 grams of Quality Dark Chocolate
25 grams of Walnuts

DIRECTIONS
Preheat oven to 175°C / 350°F.
In a bowl, mash the 4 bananas until very smooth.
Add in the vegan butter and mash that into the bananas.
Mix in the sugars, milk, vanilla, sea salt and spices.
Sift in the flour, baking powder and baking soda.
Mix gently together, and try not to overmix.
Roughly chop the chocolate and walnuts and mix in.
Pour the batter into a parchment papir lined loaf tin.
Bake the banana bread for about 60 minutes*.
Let the banana bread cool, slice and enjoy!

*Depending on your oven, the top of the banana bread may darken too fast. To prevent this, you can place some tin foil over it. My oven is a bit feisty, so I like to do this after about 30 minutes, and it works great.
