Zucchini Noodles w/ Mango, Avocado & Lime Sauce


This is a completely raw meal which means that it will leave you feeling satisfied without that heavy feeling of having to lie down on the sofa and unbutton your pants.

(Serves 2)

The Zucchini Noodles

  • 2 zucchinis

The Gorgeous Sauce

  • 1 mango
  • 1 soft avocado
  • 1 clove of garlic
  • 1 tablespoon Shoyu
  • 1 tablespoon lime juice
  • A bit of fresh mint leaves
  • A bit of fresh basil leaves
  • 1/2 teaspoon crushed pepper
  • 2 tablespoons pumpkin seeds
  • 1/2 dl water (or more if needed)

The Directions

  • Wash the zucchinis and cut off the ends
  • Magically transform the zucchinis from zucchinis to noodles using a mandolin, a julienne slicer, a spiralizer or even a basic potato peeler
  • Run all the ingredients for the sauce in a blender
  • Serve with a sprinkle of cress, parsley & spring onion
  • Enjoy!



  1. Just made this and the sauce is so delicious! I was a little skeptical with the combination of ingredients, but my oh my, do they work together! (I did have to leave out the pumpkin seeds because I didn’t have any but it was good without them.)

  2. Can I use Tamari instead of Shoyu? I didn’t know Shoyu was GF.
    Want to try this recipe so bad because I loooove Zucchini Pasta 😀
